A street food favorite of deep fried plantain served with onions and spicy sauce.

- Peel the ripe plantains by cutting off the ends and making shallow cuts lengthwise along the sides, then peel away the thin yellow skin carefully. Cut the peeled plantains into diagonal slices of about 0.5 inches thick, maintaining uniform size for even cooking.
- Heat the vegetable oil in a deep pot or deep-fryer to 350°F (175°C)—the oil should be hot enough that a piece of plantain sizzles immediately when dropped in. Working in batches to avoid overcrowding, carefully add the plantain slices to the hot oil and fry for 4-5 minutes until golden brown and crispy on all sides.
- While the plantains are frying, prepare the pepper sauce by combining the finely chopped onions, minced hot peppers, minced garlic, fresh lime juice, and salt in a small bowl, mixing thoroughly to create a chunky sauce. Let sit for 2-3 minutes to allow the flavors to meld.
- Remove the fried plantains with a slotted spoon and transfer to a paper towel-lined plate to drain excess oil. Transfer the hot fried plantains to a serving plate and immediately top generously with the prepared pepper sauce, tossing gently to coat while the plantains are still warm. Serve immediately while still hot and crispy.
