- In a large bowl, combine the flour, sugar, salt, nutmeg, ginger, cinnamon, and vanilla extract, mixing thoroughly until all spices and sugar are evenly distributed throughout the flour. In a separate bowl, beat the eggs with the milk or water and melted butter until well combined.
- Pour the wet ingredients into the dry ingredients and mix with a wooden spoon or whisk until a thick, smooth batter is formed with no visible lumps. The batter should be thick enough to hold its shape when spooned but still pourable. Let the batter rest for 5 minutes.
- Heat the vegetable oil in a deep pot or deep-fryer to 350°F (175°C), ensuring the oil is hot enough that a small piece of batter sizzles immediately when dropped in. Working carefully, drop rounded spoonfuls of batter into the hot oil, frying in batches to avoid overcrowding the pot.
- Fry the bofrot for 3-4 minutes, turning occasionally with a slotted spoon, until they are golden brown on all sides and cooked through. Remove with a slotted spoon and transfer to a paper towel-lined plate to drain excess oil. Serve hot while still warm and crispy.
