A Ghanaian fried pancake made from mashed ripe plantains and corn flour.

- Peel the ripe plantains by cutting off the ends and making shallow cuts along the sides, then peel away the thin yellow skin carefully. Grate the peeled plantains using the large holes of a box grater or a food processor, creating fine, shredded plantain. Squeeze out excess moisture by placing the grated plantain in a clean kitchen towel and squeezing firmly.
- Transfer the squeezed grated plantain to a large mixing bowl and add the minced onions, minced hot pepper, minced ginger, fresh lime juice, salt, and black pepper. Mix thoroughly by hand or with a spoon until all ingredients are evenly distributed and the mixture is well combined. The mixture should be moist but not wet.
- Heat the vegetable oil in a large skillet over medium-high heat until shimmering. Working with wet hands or slightly oiled hands to prevent sticking, form the plantain mixture into oval or round flat pancakes about 3 inches wide and 0.5 inches thick. Carefully place the formed tatale in the hot oil.
- Fry the tatale for 3-4 minutes per side until golden brown and crispy on both sides, using a spatula to flip carefully to maintain the shape. The interior should be cooked through and soft while the exterior develops a crispy crust. Work in batches if needed, keeping finished tatale warm on a paper towel-lined plate. Serve hot as a breakfast item, snack, or side dish.
