A dish where fish is wrapped in banana leaves and steamed with spices.

Ingredients

tilapia fillets4 pieces
banana leaves4 large
onions thinly sliced2 medium
tomatoes thinly sliced2 large
garlic minced4 cloves
fresh ginger sliced1 tbsp
cayenne pepper (optional)1/4 tsp
fresh lemon juice2 tbsp
salt1/2 tsp
black pepper1/4 tsp

Preparation

  1. Clean and pat dry the banana leaves thoroughly with paper towels, then pass each leaf quickly over a hot flame for 3-4 seconds until they change from dull to shiny and become pliable. Be careful not to hold them over the flame too long or they will tear and burn.
  2. Season the tilapia fillets evenly on both sides with salt, black pepper, and squeeze fresh lemon juice over them. In a separate bowl, combine the thinly sliced onions, tomato slices, minced garlic, fresh ginger slices, and optional cayenne pepper.
  3. Lay a softened banana leaf on a clean work surface and place one seasoned fish fillet in the center. Top the fish with a portion of the vegetable mixture, then fold the banana leaf around it like a burrito, tucking and sealing the edges tightly to prevent steam from escaping.
  4. Place the sealed banana leaf packets in a steamer basket over boiling water and steam for 20-30 minutes until the fish is cooked through and the flesh is opaque white throughout. Alternatively, place packets in an oven dish with 1/2 inch of water on the bottom and bake at 400°F for 25-30 minutes.
