A dish where fish is wrapped in banana leaves and steamed with spices.
Ingredients
Preparation
- Clean and pat dry the banana leaves thoroughly with paper towels, then pass each leaf quickly over a hot flame for 3-4 seconds until they change from dull to shiny and become pliable. Be careful not to hold them over the flame too long or they will tear and burn.
- Season the tilapia fillets evenly on both sides with salt, black pepper, and squeeze fresh lemon juice over them. In a separate bowl, combine the thinly sliced onions, tomato slices, minced garlic, fresh ginger slices, and optional cayenne pepper.
- Lay a softened banana leaf on a clean work surface and place one seasoned fish fillet in the center. Top the fish with a portion of the vegetable mixture, then fold the banana leaf around it like a burrito, tucking and sealing the edges tightly to prevent steam from escaping.
- Place the sealed banana leaf packets in a steamer basket over boiling water and steam for 20-30 minutes until the fish is cooked through and the flesh is opaque white throughout. Alternatively, place packets in an oven dish with 1/2 inch of water on the bottom and bake at 400°F for 25-30 minutes.
