Chicken Pepper Soup Cameroon

Ingredients

chicken pieces cut into chunks2 lbs
uziza leaves fresh chopped1.5 cups
Cameroon pepper grains or black peppercorns crushed2 tbsp
fresh ginger minced2 tbsp
garlic cloves minced6 cloves
yellow onions chopped1.5 large
chicken broth5 cups
fresh scent leaves or African mint chopped optional (optional)0.5 cup
salt2 tsp
vegetable oil2 tbsp

Preparation

  1. Heat the vegetable oil in a large pot over medium heat, then add the chopped onions and cook for 4-5 minutes, stirring frequently, until softened and golden. Add the minced garlic and ginger, cooking for 1 minute until fragrant.
  2. Add the chicken pieces to the pot with the aromatic base, stirring gently to coat with oil. Cook for 5-6 minutes over medium heat until the chicken begins to release its juices and the broth becomes fragrant. Do not let the chicken brown; the goal is to poach it gently.
  3. Add the chicken broth and salt to the pot, bringing to a boil, then immediately reduce heat to low and cover with a lid. Simmer gently for 15-20 minutes until the chicken is very tender and cooked through.
  4. Toast the Cameroon pepper grains or crushed black peppercorns in a dry pan over medium heat for 2-3 minutes until very fragrant, shaking the pan frequently to prevent burning. This toasting intensifies the pepper's pungent flavor essential to the soup.
  5. Add the toasted crushed pepper, uziza leaves, and scent leaves if using to the simmering broth. Continue simmering uncovered for 8-10 minutes until the leaves are tender and the soup develops its signature peppery, aromatic flavor. The broth should remain relatively clear and brothy, not thick or creamy. Taste and adjust seasoning with additional salt or pepper if needed. Serve hot in small bowls as an appetizer or light meal.
