A creamy peanut soup simmered with chicken and tomatoes.

- Heat the vegetable oil in a large pot over medium heat, then add the chopped onion and cook for 4-5 minutes, stirring frequently, until softened and golden. Add the minced garlic, ginger, and hot pepper if using, cooking for 1 minute until fragrant.
- Add the cubed chicken or beef to the pot with the aromatic base, stirring gently to coat the meat with the oil. Cook for 6-8 minutes over medium heat until the meat begins to release its juices and the broth becomes fragrant.
- Add the crushed tomatoes to the pot and stir well, cooking for 3-4 minutes, then add the chicken or beef broth and water. Bring to a boil, then immediately reduce heat to low, cover with a lid, and let simmer for 25-30 minutes until the meat is tender and the broth is well-flavored.
- In a small bowl, mix the peanut butter or ground peanuts with a small amount of warm broth to create a smooth paste without lumps, then slowly stir this mixture into the pot with the simmering soup, mixing thoroughly. Continue simmering uncovered for 15-20 minutes, stirring occasionally, until the peanut paste is fully cooked and integrated, and the soup becomes thick and creamy with a rich, nutty flavor. The soup should coat the back of a spoon.
- Taste and adjust seasoning with additional salt and pepper if needed. If the soup is too thin, simmer for another 5-10 minutes to allow excess liquid to evaporate and the soup to thicken further.
