A smooth maize porridge commonly served with meat stews or chakalaka.

- Bring water or whole milk to a rolling boil in a large pot, adding a pinch of salt to enhance the flavor. Use water for a lighter pap or milk for a creamier, richer pap depending on preference.
- While the liquid is heating, place the maize meal in a separate bowl and slowly add cold water, stirring constantly to form a smooth slurry without any lumps. The ratio should be about 1 part maize meal to 1.5 parts cold water.
- Slowly pour the smooth maize meal slurry into the boiling liquid while stirring constantly and vigorously with a wooden spoon to prevent lumps from forming. The constant stirring is absolutely essential during this step.
- Reduce the heat to medium-low and continue stirring frequently, at least every minute, to prevent the pap from sticking to the bottom of the pot and burning. Simmer for 15-20 minutes until the pap thickens significantly and becomes porridge-like in consistency.
- Stir in a knob of butter and additional salt and black pepper to taste. Continue cooking for 5 more minutes, then serve the pap hot and creamy. Adjust the thickness by adding more milk or water if needed—the pap should be thick but still pourable, similar to oatmeal.
